I just love this autumn weather, don't you? It's always a little sad to see summer go, but with the cooler weather comes an irresistible urge to spend time in the kitchen. Macaroni and cheese is my favorite comfort food; chicken and dumplings is my husband's.
The other day I came across a recipe that I had forgotten about, one I really love this time of year. It's so quick and easy and tastes so, so good. Don't leave off the dollop of sour cream when you serve it; that's what really "makes" this recipe, I think.
Zesty Sausage and Beans
1 pound smoked sausage, sliced
1 16-ounce jar thick and chunky salsa
1 15 1/2-ounce can dark red kidney beans (drained)
Combine all in a large skillet. Bring to boil and simmer 10 minutes or until hot. Serve over rice. Top with sour cream.
Oh, so comforting on a cool autumn evening. Enjoy!

Sounds delicous! Thanks for sharing. :) I've been a in a cassarole "opera" lately, and making all kinds of new and exciting ones... (I'll have to get around to posting them up soon.) I'm going to have to try a variation on your Zesty Sausage and Beans in a cassarole.

The coffee cake sounds so good! I just put a roast in the crock pot (simplest thing there is to cook!) and I'm starting to smell the onions and garlic.
