POTATO SALAD

I made potato salad this afternoon to have with supper tonight. I make THE BEST potato salad! That's not bragging, that's just stating facts and quoting my husband. I don't make it as often as I should, but I'm always glad I did. Would you like the recipe? I'll even include the secret ingredient - the one that makes it taste so good.

It's really quite easy. Cook four medium to large-sized potatoes. I usually just fix them in the microwave like "baked" potatoes and make sure I don't get them too awfully soft. Cool the potatoes for half an hour or so, until not too hot to handle. Peel the potatoes (easy - the skin pretty much pulls right off) then dice them into half-inch or so pieces and put them in a large bowl. Dice a stalk or two of celery and two or three green onions; add to bowl. Peel and coarsely chop three or four hard-boiled eggs; add to bowl. Sprinkle on pepper to taste. Pour about half a jar of Marzetti's Original Slaw Dressing (that's the secret ingredient) over the potatoes and other ingredients and stir together. Add more dressing to get to the consistency that you prefer. Transfer to a pretty glass bowl, top with slices of boiled egg, then cover and chill for at least two or three hours.

That's it. Really quite simple and oh, so good! As for the Marzetti's dressing, it is available either in the produce section (refrigerated) with the salads or on the shelf with the salad dressings (the jar with the blue lid). As far as I can tell, it's the same recipe in both so I look for the one on the shelf first. Marzetti's made that before they branched out into the refrigerated dressings and I think it's their best product ever. It makes some pretty great coleslaw, too.
